Skinny vegan, gluten-free Sweet potato soup

Ingredients
  • 4 - sweet potatoes
  • 2 cups washed, chopped cilantro
  • ½ small red onion
  • 3-8 green chillies
  • 2 tbsp olive oil or coconut oil or ghee
  • 1 1 inch chinese Ceylon cinnamon stick
  • 1 bay leaf
  • 2 star anise
  • ½ tsp - coriander powder
  • Pink Himalayan salt
Instructions
  1. Add 1½ tbsp oil to a pot. Heat to medium.
  2. Add green chillies, onion. Cook till onion is transparent.
  3. Add sweet potatoes. Close lid and cook for 2 minutes. Add salt and cook till soft. Stir occasionally.
  4. Add cilantro. Cook for 2-3 minutes.Turn off stove. Let it cool.
  5. Grind the mixture.
  6. Add remaining oil or ghee to pot. Heat to medium.
  7. Add cinnamon, star anise, bay leaf.
  8. Add ground sweet potato mixture.
  9. Add salt, coriander powder. Cook for 3-5 minutes. Turn off stove.
  10. Garnish with cilantro.
  11. Server hot immediately.
