Ingredients
  • 2 cups - Fresh young unripe or green Jackfruit
  • 3 tbsp healthy oil as coconut oil
  • 1 big Onion
  • 1 bunch - Spring Onion - optional
  • ½ cup - fresh Curd/Yogurt. Replace with almond or coconut milk if vegan.
  • 5 - Green chillies
  • ¼ tsp - Cumin
  • Salt
  • ½ tbsp - Chilli powder
  • 1 tsp.- coriander powder
  • 4 Sprigs - Fresh Cilantro
Instructions
  1. Cut jackfruit into quarters.
  2. Boil water. Place cut jackfruit quarters in water. Cook for 10 mins or till soft.
  3. Turn off stove. Remove jack fruit from water. Let them cool.
  4. When jackfruit cools down, cut and discard skin. Remove and discard seeds.
  5. You can use remaining meat. Cut meat into small (approx 1 inch) pieces.
  6. In a pot, add oil, heat to medium.
  7. Add cumin seeds, cook for 5 minutes.
  8. Add green chillies, onion cubes. Cook till transparent.
  9. Now add jackfruit meat. Stir. Cook for 3 minutes.
  10. Add salt, chill powder, coriander powder.
  11. Close lid, cook for 3 minutes.
  12. Add yogurt, stir and cook for another 5 minutes.
  13. When done, garnish with cilantro.
  14. Serve with rice, quinoa or roti.
