Bhel puri with Brussel sprouts and Sprouted beans

Ingredients
  • For green chutney
  • 1 cup - fresh mint leaves
  • 1 cup - fresh cilantro
  • 4 - green chillies
  • ¼th cup - peanuts. (To make nut-free, use sesame seeds)
  • ¼th tsp - fresh squeezed lime juice
  • Salt
  • For sweet chutney
  • 10 - pitted dates
  • 4 pods - fresh tamarind (If you don't have tamarind, replace with fresh steamed raw mango extract)
  • 1/10th tsp - salt
  • Bhel ingredients
  • 4 cups puffed rice
  • 2 small sized cucumbers
  • 5 brussel sprouts
  • ½ red onion
  • 1 tomatillo
  • 2 red radish
  • 8 sprigs cilantro
  • 2 tbsp - sev
  • 2 tbsp - Spicy mixture (Optional)
Instructions
  1. Add and heat oil to pan. Add 1 tbsp cumin, ⅛th tsp turmeric powder. Add puffed rice to this. Mix well and roast for 10 minutes. Stir every 1 minute.
  2. Soak tamarind for 15 mins. If using raw mango, steam in pressure cooker for 2 whistles or till soft in a pan.
  3. While it soaks, roast peanuts or sesame seeds till golden brown.
  4. In a grinder, grind dates with little water.
  5. Squeeze tamarind for extract. If using raw mango, squeeze steamed mango for extract.
  6. Add tamarind extract and dates mixture to a saucepan. Let it boil for 10 minutes. Don't let it become thick. If it becomes thick, you can't mix properly in bhel. Keep it semisolid consistency. Add water if you need to. At end, add salt. If making with raw mango, follow same procedure.
  7. Now add all green chutney to blender, grind till smooth.
  8. Cut onions, tomatillos, sprouted beans and cucumbers to small cubes.
  9. Add puffed rice to mixing bowl.
  10. Add grated brussel sprouts, radish, cilantro, 1 tbsp green chutney and 1 tbsp tamarind chutney.
  11. There are no exact measurements for chutneys. Adjust according to your taste. I like my bhel spicy so I add more green chutney. I add more tamarind chutney for who like sweeter taste.
  12. Sprinkle sev and spicy mixture on top.
  13. Optionally add sev puri.
  14. Serve immediately before it is soggy. Chutneys make puffed rice soggy very soon. Eat while it is crunchy.
