Fig Salad

- Salad Ingredients
- 3 - Figs
- 2 sprigs Kale
- 2 sprigs Leaf lettuce
- ½ cup - Arugula (Optional)
- ½ cup - Steamed/Grilled fresh butternut squash
- 1 tsp - Fresh peas in pod
- 1 tbsp - Grated goat cheese
- 1 tbsp - fresh pomegranate
- 1 tbsp - pine nuts (Can substitute with walnuts or sliced almonds)
- Dressing Ingredients
- 1 tbsp - Olive Oil
- 1 tsp - Fresh lime juice
- ¼ tsp - oregano
- Fraction of pinch of salt (You can skip salt)
- Fraction of pinch of pepper
- Remove peas from pods. Chop butternut squash into wide cubes.
- Steam or grill butternut squash and peas.
- Combine all dressing ingredients in bowl.
- Whisk or mix with spoon.
- Toss salad ingredients in a mixing bowl.
- Pour dressing over salad.
- Toss again to mix thoroughly
- Serve and enjoy.
