Ingredients
  • Salad Ingredients
  • 3 - Figs
  • 2 sprigs Kale
  • 2 sprigs Leaf lettuce
  • ½ cup - Arugula (Optional)
  • ½ cup - Steamed/Grilled fresh butternut squash
  • 1 tsp - Fresh peas in pod
  • 1 tbsp - Grated goat cheese
  • 1 tbsp - fresh pomegranate
  • 1 tbsp - pine nuts (Can substitute with walnuts or sliced almonds)
  • Dressing Ingredients
  • 1 tbsp - Olive Oil
  • 1 tsp - Fresh lime juice
  • ¼ tsp - oregano
  • Fraction of pinch of salt (You can skip salt)
  • Fraction of pinch of pepper
Instructions
  1. Remove peas from pods. Chop butternut squash into wide cubes.
  2. Steam or grill butternut squash and peas.
  3. Combine all dressing ingredients in bowl.
  4. Whisk or mix with spoon.
  5. Toss salad ingredients in a mixing bowl.
  6. Pour dressing over salad.
  7. Toss again to mix thoroughly
  8. Serve and enjoy.
