Radish, tomatillo sandwich with yogurt spread

- Whole wheat bread, preferably with nuts n flax seeds
- 1 - red onion
- 1 - radish
- 1 - cucumber
- 2 - Lettuce leaf whole leaves
- Dressing
- Yogurt. Preferably homemade - 3 tbsp
- 1 avocado
- Olive oil - 1 tbsp
- pinch of salt, pepper
- Remove avocado skin and seed.
- Pulse dressing ingredients in a blender slightly.
- Slice onion, radish, cucumber enough for the number of sandwiches you are making.
- Cut lettuce leaves into bread-sized pieces.
- Spread dressing on bread slice.
- Stack veggie slices on the bread slice.
- Spread dressing on another bread slice.
- Top the second bread slice.
- Place sandwich on the panini grill. Close and grill until browned.
- Serve immediately
