Radish, tomatillo sandwich with yogurt spread

Ingredients
  • Whole wheat bread, preferably with nuts n flax seeds
  • 1 - red onion
  • 1 - radish
  • 1 - cucumber
  • 2 - Lettuce leaf whole leaves
  • Dressing
  • Yogurt. Preferably homemade - 3 tbsp
  • 1 avocado
  • Olive oil - 1 tbsp
  • pinch of salt, pepper
Instructions
  1. Remove avocado skin and seed.
  2. Pulse dressing ingredients in a blender slightly.
  3. Slice onion, radish, cucumber enough for the number of sandwiches you are making.
  4. Cut lettuce leaves into bread-sized pieces.
  5. Spread dressing on bread slice.
  6. Stack veggie slices on the bread slice.
  7. Spread dressing on another bread slice.
  8. Top the second bread slice.
  9. Place sandwich on the panini grill. Close and grill until browned.
  10. Serve immediately
